You don’t really …
You don’t really HAVE to use the clutch on a motorcycle. But if you choose to not use the clutch you just have to make sure that the engine speed matches the transmission speed before you drop it in gear. The driver I imagine has his left arm tucked in to cut down on wind resistance.

Somebody explain to me how and why his left hand seems to not be on the handlebar or operating the clutch. Is this some sort of racing technique?
